I’m just a regular guy living a simple life, enjoying regular (eat want you want) food and the occasional indulgence. I am a husband who is married to my amazing wife Tammy, who unfortunately was diagnosed with Hashimoto’s and Hypothyroidism in 2019, the same year we were married.
Her health conditions make it tough to maintain a “normal” lifestyle, but together, we navigate the ups and downs, while still enjoying life’s little pleasures.
I created this blog as a support system for my wife. I wanted to show her she is not alone on this autoimmune journey. I wanted us as a mixed-diet couple to share our experiences with others in a similar situation that would help guide people through the same issues we started out with.
We wanted to offer our own original gluten-free recipes to help others come together to help them navigate life’s dietary challenges. Whether you’re managing autoimmune issues or simply embracing a gluten-free lifestyle, I’m here to share the insights and solutions we’ve discovered along the way.

More Of My Back Story & My Inspiration!
After spending over 30 years renovating homes and pools (yes, I’m the guy who can make your space look brand new), I shifted gears into the world of web design and branding. I was the creative force behind Creative Pen Studio— Turns out, I have a bit of a knack for making things beautiful and functional—and that love for transformation carries through into everything I do, especially when it comes to helping businesses big and small shine online.
But let me be clear—while websites and branding was my day job, and some smaller projects still are, especially for my foodie blogger friends, there’s a bigger story here. My true passion right now? The Wandering Quill—my gluten-free, autoimmune-friendly site. And trust me, it’s not just a hobby. It’s PERSONAL!.
The inspiration behind The Wandering Quill comes from my amazing wife, Tammy. For over 5 years, Tammy’s been dealing with autoimmune issues, and we’ve had to rethink just about everything we eat and how we live. Gluten-free became our way of life, but it wasn’t always easy to find reliable info, delicious recipes, and support along the way. So, I did what any creative guy would do: I combined my design skills with our journey and created The Wandering Quill. ( I’m a Writer and a Blogger, so it seemed appropriate)
I started this blog in my small corner of the internet where I not only support my wife as I mentioned earlier but to share the way we eat gluten-free, and hopefully help make your life a little easier. If you’ve ever wanted to bake gluten-free bread, whip up some desserts, or cook up easy meals that everyone will actually enjoy—this is for you.
When Tammy first went gluten-free back in 2019, We as a mixed-diet couple found it so hard to find recipes that worked for the both of us. Half the time, the recipes called for ingredients that were way too fancy and hard to find, and the other half required so much time to cook that I was basically making dinner in the middle of the night! LOL! We didn’t have hours to spend on dinner, so we spent a lot of time figuring out how to make our favorite meals gluten-free, and how to make them quickly! The goal was to make eating gluten-free simple, delicious and affordable!
Let’s be real—gluten-free products can be pricey, and I should know because I do the grocery shopping, so I do my best to stretch every ingredient and every dollar. I’m always on the lookout for new recipes to try, and I love the challenge of tweaking them to make them gluten-free. I also get a kick out of coming up with my own original gluten-free creations—because who says eating gluten-free can’t be fun (and tasty too)?
Now, this site is more than just a space for recipes and tips—it’s a place where people who are navigating autoimmune challenges can find resources, support, and a little bit of humor along the way. It’s also a place where my passion for eco-friendly living blends with our need to eat healthier. So when I’m not designing websites for businesses or creating cool branding, I’m working hard to make sure that The Wandering Quill is a hub of inspiration and information for anyone living the gluten-free, autoimmune-friendly life.
